Beyond Meat, Oatly, Impossible Foods — three startups that turned into some of the best-known brands in the plant-based food sector. At their peaks, these companies were worth a collective $20 billion.

Now, the venture investors that backed these three success stories before they got big have identified their next target. It’s a startup called Oshi.

Unlike most plant-based food companies, Oshi isn’t trying to replace beef or chicken. Instead, it’s tackling seafood.

Its flagship product is a whole-cut plant-based salmon fillet designed to look, cook, and flake like conventional salmon. That's a significant distinction.

While many plant-based seafood products are processed into nuggets, patties, or fish sticks, Oshi has developed a patented layering technology that recreates the texture of a real salmon fillet. The result contains 18 grams of protein, omega-3 fatty acids, and no mercury or microplastics.

The company believes the timing is ideal.

Global demand for seafood continues to rise, but traditional fisheries are under increasing pressure from overfishing, climate change, and rising costs. Farmed salmon has also faced growing scrutiny over disease outbreaks, pollution, and environmental impact. Oshi's goal is to offer consumers a premium seafood option without relying on wild catches or fish farms.

Rather than attempting to compete across the entire seafood aisle, the company has started with salmon — one of the world's most popular and valuable seafood categories. From there, it plans to expand into additional species using the same manufacturing platform. Its first whitefish products are already in development.

Oshi has spent roughly five years developing its technology before bringing products to market. That preparation appears to be paying off.

Over the past year, the company has expanded into more than 100 restaurants, including chains such as Veggie Grill and Next Level Burger, while also selling directly to consumers online. According to the company, restaurant pilots have consistently produced strong repeat demand, with Oshi becoming one of the best-selling plant-based menu items at many participating locations. Revenue increased fourfold year over year during this pilot phase — all before any meaningful retail rollout.

Now the company is entering what management believes is its next stage of growth.

Oshi recently secured distribution into more than 680 retail locations across the United States and projects more than one million dollars in revenue during 2026 as those launches ramp up. It has also formed a strategic partnership with one of Latin America's largest seafood manufacturers, which invested three million dollars in the company and could help accelerate production and international expansion.

Oshi has raised more than $10 million from professional investors, including Unovis, Alumni Ventures, Pitango, OurCrowd, Cardumen Capital, and several prominent angel investors.
